Description
Sébastien Mouzon comes from a long line of vignerons and represents the 9th generation in the family. The domaine is a modest 7 hectares, almost all of which are located in his home village, the Grand Cru of Verzy. Since taking the helm in 2008, Sébastien has introduced both organic and biodynamic practices across the holdings and has gathered a cult following for his production. This bottle is a nod to his philosophy of atavism – a return to the former “ancient” or “ancestral” way of making Champagne.
L’Atavique sees around 25% old oak used for primary fermentation, with the remainder in stainless steel tanks, before spending 36 months on lees. The relatively long lees aging, especially for a non-vintage wine, helps to add depth and complexity to it. Verzy is often an overlooked village and is largely blended with other villages within the Montagne de Reims area. Now, Sébastien shines light on the village, demonstrating the complexities that it holds.
