Located towards the northern end of Beaune’s belt of Premier Cru vineyards, ‘Cents Vignes means ‘One Hundred Vines’, a nod to a climat which is among the largest in Beaune.
Small parcels of low yielding fruit were handpicked from the biodynamic-certified ‘Cents Vignes’ vineyard, with 30% left as whole-bunch and the remainder de-stemmed and crushed. The wine was fermented using indigenous yeast in stainless steel tanks. Jane’s minimal intervention approach allows this wine to express a true sense of place; gentle pump overs and punch-downs employed as needed and with no sulphur added until two months after malolactic fermentation had finished. The wine was matured in French oak barriques for 12 months with one barrel out of six being new, before being bottled in December 2019.
