Description

The name ‘Chouacheux’ comes from the local Burgundian pronunciation of the old French Sausseux (“place planted with willows”) and accurately describes its previous wooded and shrubby vegetation covering. The climat lies towards the southern end of Beaune, nearing the border with Pommard, not far from Beaune’s famed Clos des Mouches. The clay-limestone soils hold a higher degree of iron, resulting in a redder colour. 

Fanny’s approach in the cellar remains true: gentle handling through fermentation, followed by ageing in older oak to avoid any harsh oaky thumbprints upon the fruit. It spends around 15 months in barrel before bottling, with just a touch of sulphur added for stability.
