With the turn of the millennium, Asahi Shuzō launched their ambitious project with the release of Dassai 23. The release of the product in 2000 saw the highest degree of polishing sake released at that time. To achieve such a highly polished ratio takes a staggering 168 hours of work; much greater than the average 30-36 hours of polishing for a ‘regular’ Junmai Daiginjo. Dassai 23 was created to see the lengths that brewers could push the famed Yamada Nishi rice to whilst still creating a sake of balance and complexity.
