Description
The Caillot estate was founded in 1961 by Roger Caillot, the father of current vigneron Michel Caillot. The estate covers 13 hectares of vineyards: seven planted to white and six to red grapes. The main focus of their holdings is in Meursault, with additional holdings in Puligny-Montrachet, Batard Montrachet and Satennay for whites. Their red parcels are located in Pommard, Volnay, Beaune and Monthelie. This array of holdings is even more enviable with an average vine age of around 40 years, with some vines as old as 70 years.
Since Michel joined the estate in the late 1980s the estate has moved towards organic viticulture, even without seeking certification; a stronger focus on quality has seen a decrease in yields as well. In the cellar, the aim is for as little intervention as possible, preserving the individuality of the terroir. Wines are moved by gravity in the three-level winery, with the wines kept on lees for as long as possible and only a single racking before bottling. The white wines are fined but not filtered, new oak not exceeding 30% for village level wines. The wines see 12 months in barrel, before a further 12 months in tank before bottling.
Michel’s wines have a distinctive house style, with an emphasis on a freshness of citrus-driven flavours and vibrant minerality, without being overpowered by winemaking techniques or oak usage.
2014 was—and still is—a stunning vintage for whites across Burgundy with a purity of fruit held together with a tension and freshness. This rare back vintage trio highlights the individuality and character of the terroirs within Meursault—delivered by the meticulous hands of a winemaker so adamant about the purity of the site’s expression.
