Benoît Doussot worked as the right hand to Bertrand Gautherot at Vouette & Sorbée, and together they launched the project of Champagne Clandestin. Meaning secret or hidden, Clandestin works with the west-facing vineyards within Buxières-sur-Acre (located in the very south of Champagne). Being west-facing, they receive less sunlight than southerly and east-facing vineyards and have been long overlooked by producers due to the additional effort required in the vineyards. Through organic farming and fastidious work in the vines, Benoît demonstrates the potential of these ‘lesser’ sites.

The wines are vinified in a similar approach to that of Vouette & Sorbée, with primary fermentation in French oak with no additions through the process. The wines receive no dosage (added sugar) upon disgorgement, allowing a pure expression of the site to shine through, in Benoît’s mind. Les Semblables, one of two Champagnes produced by Clandestin, is 100% Pinot Noir with a signature salty minerality to the palate.

Champagne Clandestin only began with the 2015 harvest, and is proving an exciting, and delicious, operation to watch develop.

The Pouillon family has been growing grapes in Champagne for well over a century, but it wasn’t until 1947 that they first began producing their own wines. The estate is now continued on by Fabrice, the third generation and grandson of Roger Pouillon. The Réserve Brut represents a blend across the various villages where the Pouillons have vines, being approximately 65% Pinot Noir, 20% Meunier and 15% Chardonnay. Majority of the wine is fermented in oak barrels, a signature approach of Fabrice’s, with a small portion in tank and an overall minimal intervention approach to the winemaking.

A firm believer in healthy & living soils, Fabrice firmly believes that “the greatest wines are formed in the vineyard”. The dedication towards his vines is evident through each of his 36 parcels being individually handled in the winery, his use of Tango, his horse, for tilling the soils and respect for the vine’s biological rhythms.

The Brut Reserve demonstrates Fabrice’s mastery of his style; the balance between complexity of oxidative barrel usage whilst still retaining freshness, and generous citrus, spice and toasty notes.

Alexandre Chartogne pays homage to Saint Anne, the patron saint of his home village of Merfy, with the estate’s foundational cuvée. As an ardent believer in challenging the norm, Alexandre has done incredible work in the vineyards, such as the use of horses for ploughing the soils and no use of herbicides, and subsequently taken the quality of the wines from the domaine from strength to strength.

The blend varies slightly with each release to help in consistency of Sainte-Anne’s style, however is generally a majority of Pinot Noir to the blend. The wine is vinified without added yeasts in a combination of both barrels & stainless steel, to add to the complexity. Dosage is kept to a modest 4-5 grams per litre of sugar, allowing just a harmonious balance overall. A myriad of flavours such as dried orchard fruits, freshly baked pastry and fresh citrus all intertwine together resulting in a stunning aperitif Champagne option.

Alexandre’s speciality may lie with his single vineyard offerings, but Sainte-Anne is a wine that should not be overlooked.
