The Pouillon family has been growing grapes in Champagne for well over a century, but it wasn’t until 1947 that they first began producing their own wines. The estate is now continued on by Fabrice, the third generation and grandson of Roger Pouillon. The Réserve Brut represents a blend across the various villages where the Pouillons have vines, being approximately 65% Pinot Noir, 20% Meunier and 15% Chardonnay. Majority of the wine is fermented in oak barrels, a signature approach of Fabrice’s, with a small portion in tank and an overall minimal intervention approach to the winemaking.
A firm believer in healthy & living soils, Fabrice firmly believes that “the greatest wines are formed in the vineyard”. The dedication towards his vines is evident through each of his 36 parcels being individually handled in the winery, his use of Tango, his horse, for tilling the soils and respect for the vine’s biological rhythms.
The Brut Reserve demonstrates Fabrice’s mastery of his style; the balance between complexity of oxidative barrel usage whilst still retaining freshness, and generous citrus, spice and toasty notes.
